The chemical composition of cuts was determined: moisture, fat, protein. Methods of moisture determination – according to “GOST 9793-2016 Meat and meat products. Methods of moisture determination”. Methods of determination of fat – according to “GOST 230422015 Meat and meat products. Methods of determination of fat”. Mass fraction of protein was determined by the Kjeldahl method.  The analysis of the obtained results allowed us to conclude that bulls of Kazakh white-headed and Kalmyk breed have high slaughter qualities and differed insignificantly. There were no significant differences between the breeds in the content of total protein and chemical composition of cut flesh.
